Step by Step Recipe for Baingan Bharta

Baingan is basically a brinjal. Smoky mashed eggplant is called Baingan bharta in simple words. Ingredients which are used in recipe of Baingan Bharta:

1) One large Brinjal or Eggplant

2) Little amount of ghee

3) Some cumin seeds

4) Fine chopped onions and tomatoes

5) Ginger and garlic paste

6) Chopped green chillies

7) Turmeric powder

8) Coriander cumin seeds

9) Garam masala

10) Fine chopped coriander

Recipe of Baingan Bharta:

1) Firstly, grease the eggplant with your hands or brush with oil. This procedure will aid in removing the skin of the brinjal and roasting will become easy.

2) In the next step, roast the eggplant in a direct flame of the stove. Make sure it should be properly cooked. 

3) Keep rotating the brinjal from time to time so that it can be cooked evenly and consistently. 

4) This will take around 10-15 minutes and your eggplant will be properly cooked from all sides. 

5) Once it becomes roasted, keep it aside to cool down for sometime so that its skin could become loose and easy to remove with fingers. You can also insert a knife in the middle part to check if it is properly cooked.

6) Start the peeling process and peel off the charred skin of the brinjal. If there is any burnt skin , then you can immerse the brinjal in a bowl of water. It will remove all the burnt parts of the eggplant.

7) With the help of a fork or potato masher, you can mash the pulp properly and thoroughly in a separate bowl.

8) Now heat the separate skillet with some cooking oil on it and add the cumin seeds in the oil. You can also use ghee in lieu of oil.

9) Now in the next step, add some onions in the oil and saute the mixture until they become golden in colour. 

10 ) Now add the grated ginger or paste in the mixture. You can add some garlic paste as well to make Baingan Bharta more tasty. 

11) Don’t forget to add green chillies in the mixture, that would be good for the taste of bharta.

12) Keep the saute process as it is so that the raw smell fades away. In order to make it more delicious, add chopped tomatoes, turmeric, coriander cumin seeds powder in the mixture.

13) And in the last step, add the mashed pulp of eggplant in the mixture. Don’t forget to add salt as per your taste. 

14) Blend the mixture properly and stir it with a ladle or spoon.
