About Dahi Vada and its formation:


Dahi vada is a kind of soft lentil fritter which are simmered in creamy and spicy yogurt. If we bifurcate dahi vada in two words, then dahi means “curd” and vada means “fried fritters.” This delicious snack is topped with tamarind chutney and green or tomato chutney . And how can we forget desi spices like cumin powder, red chili powder, chaat masala, garam masala.

Ingredients of making Dahi Vada with their quantity:
1) Cooking oil
2) 1.5 cups of Husked black gram (Dhuli urad dal) soaked in water for 6 hours.
3) 2 tsp of salt
4) 2.5 cups of creamy beaten smooth yogurt
5) Around 2 tsp of cumin seeds, they must be powdered or roasted.
6) Around 2 tbsp of chopped coriander leaves.
7) Some Black pepper
8) Some Chili powder
9) Some black rocksalt
10) Chaat masala

Recipe of Dahi Vada:

1) The curd is the main ingredient of this snack so use it wisely and judiciously. Curd should always be thick and fresh.
In this step, add half a cup of urad dal to the bowl as per your flavors.

2) Pour fresh water in the daal and remain it as it is for around 6 hours. Soaking will help the batter to fluff up during the grinding process.


3) Meanwhile you can make chutney and keep some water in the fridge so that water becomes cold.


4) To make chutneys, please keep in mind that they should be medium thick otherwise your curd will become very light and runny. Add all the ingredients to make the chutney a fine paste.
To make paste use a blender jar. You can add more spices or ingredients to make it flavorsome. Now in this step, you need to make dahi vada batter. Drain your daal properly and add it to a blender jar with cumin seeds, salt, peeled ginger or garlic paste, and little water.


5) Blend the mixture properly and add little water again to it. Grind the mixture.


6) Keep the grinding part until your batter becomes thick and smooth. Make sure not to add much water to it otherwise, the batter will become runny. If your batter accidentally becomes runny you can add rice flour in it to bridge the gap.


7) Now transfer your batter in another bowl and beat it to aerate. By doing so, your batter vadas become fluffy in nature so that they get cooked well.
8) Add some cashews to the butter mixture to make it tastier.

9) Now place a wide bowl separately with water and soak the fried balls.
10) Now add curd in a separate bowl. It should be spacious enough to hold all the vadas. Whisk them together with salt and powdered sugar as per taste.


11) Frying of vadas is the main step so be careful while doing it. Heat the skillet in medium flame. Drop small amounts of batter using your greased fingers. Add vadas in the skillet or kadai so that the skillet won’t become overcrowded.

12) The batter will slowly puff up after adding the cooking oil
If they become light golden, stir them properly.

13) Drain your vadas with a tissue.


14) Keep them aside for a few minutes so that oil could be drained off. After that transfer them into a bowl of water.
Soon, they start to absorb water and become bigger.

15) Now assemble dahi vadas with spatulas and on plates and serve them with curd.
