Recipe of restaurant style Hara Bhara Kabab


1) Cooking of peas and potatoes: The first step starts with cooking potatoes and peas. Take 2-3 pieces of large potatoes, rinse them and add them in a pressure cooker with water. Now boil them for a short period of time. 

2) Now put all the peas in a bowl of steel and put this bowl at the upper layer of water in the cooker of potatoes. Make sure you do not add water in the bowl of peas. 

3) Now cover the lid of the cooker and wait for 6-7 whistles. 

4) Now both the peas and potatoes must be softened enough. Take the bowl of peas and strain them properly. Peel the potatoes and keep them aside in a separate container.

5) Blanching of Spinach: In this step, blanching of spinach happens. Rinse the spinach leaves and drain them with a spatula. Better if you prefer leaves in place of stems. Stems are used for crunching purposes. 

6) Now take a separate pot and boil water in  it. You can also add some salt in it. In this boiling water, add your spinach leaves for a couple of minutes. This step is used to blanching the leaves. After that, with the help of tongs, you can remove them from the boiling water and place them in cold water, this will help leaves to retain their green colour. 

10) After that, remove the leaves and squeeze the leaves to remove unwanted water.

11) Now chop the spinach leaves on a chopping board. Make sure the spinach should be finely chopped and you can also add some roasted besan to avoid stickiness.

12) In a mortar pestle, take green chillies and chopped ginger. Crush them so that they can become a paste. 

13) In another vessel, you can take some gram flour. Keep the stirring  process on a low flame. Keep an eye on the colour of besan, it will soon turn into a golden colour. Keep this mixture aside as well. 

14) Making of Hara Bhara Kabab mixture: In this step, add chopped pieces of spinach and peas in the bowl. Add some grated potatoes over the mixture. Now add roasted gram flour which you made earlier. Add basic spices like ginger paste, dry mango powder, garam masala and of course salt. Mix all the spices with the help of spatula. 

15 In the next step, mash the mixture properly and bring the whole mixture together just like a ball. 

16) Now take some little portion of mixture and start converting them into patties. You can add some cashews as well in the portion of the kebabs. 

17) Now pan fry the kebabs in the skillet. Keep them until they become golden in colour. Fry both sides of the kebab as it is, so that the cripiness should be maintained.

18) This could be the last step of this recipe. You can serve your little patties with some mint chutney or red sauce as per your wish.
