Ingredients of cooking of Dahi Ke Kabab


1) Some quantity of Hung curd
2) Little Black salt
3) Chopped pieces of ginger
4) Chopped coriander stems around 2 tbsp
5) Cumin powder 2 tsp (roasted)
6) Salt as per taste
7) Chopped onions 2 tbsp
8) Chopped pieces of green chilly
9) Fried onions – 4 tbsp
10) Grated Paneer 1/2 cup

How to make Dahi ke Kabab in few and simple steps


1) Making of Hung Curd
2) Hung curd is basically a thick yogurt which is drained all of its whey. Greek curd can also be used in place of Hung curd.
3) Before starting the procedure, put the strainer on top of the bowl. Then line a thin cloth on the strainer and add 2 cups of chilled curd.
4) Tie the edges of the muslin cloth together and place a heavyweight lid on the tied cloth.
Then put the whole thing in the refrigerator and keep it for 10 to 12 hours and after that use the bowl to collect the whey.
5) Next day, your curd becomes thicker and creamier.
6) Now put the hung curd in a mixing bowl and use a spatula to scrape the curd slowly.
7) Now set aside the curd and keep it in the refrigerator for sometime.

Making of Yogurt Mixture

1) Heat the skillet and add some spoons of besan on it. Now roast the besan for some time on a medium flame until it becomes aromatic.Make sure its color should be changed but not overcook it.
2) Keep stirring for 5 to 7 minutes and the golden color of mixture will start appearing.
3) Now take the hung curd, add chopped onions, green chillies, chopped pieces of ginger as mentioned in the ingredients. Don’t forget to add coriander leaves in the mixture.
3) Pour cumin powder and garam masala in the mixture.
4) Now blend the roasted besan, cumin powder, garam masala, blac pepper powder and salt( as per your taste) Use the small whisk after that to stir the whole material so that all the spices could be mixed together.
5) Now with the help of a spatula, scrape the sides and take the kabab mixture to the center.
6) Keep the mixture in the fridge for sometime so that the kabab mixture will take its shape.

Frying of Dahi Kabab


1) Take the skillet or frying pan and put some cooking oil on it. Heat the oil on a medium flame.
2) Now create round shaped balls of kabab mixture. Make sure balls should be soft and the process should be so gentle. This helps to maintain consistency of the balls.
3) If need be, add besan to the balls to make the balls too firm.
4) Now immerse the balls in the oil skillet carefully. Now the frying procedure will start slowly and steadily.
5) When one side is properly fried then turn the ball to repeat the same procedure.
6) Whenever you see a golden color crust, turn off your gas stove and get ready to serve hot Dahi kabab for your loved ones.
