Step by Step Procedure to Prepare Dal Makhni

Dal makhani is a classic and delectable Indian curry made with urad dal, kidney beans or rajma, and lots of spices. Known as one of the most popular lentil dishes, this tasty curry  originated in the Punjab region of India and Pakistan. 

This Punjabi dal makhani recipe involves a few steps to cook and prepare. Even one bite is enough to tickle your taste buds of this flavorsome Indian dish. Ingredients and Substitutes while cooking Dal Makhani:


1) Cream: There are various types of cream that are available in the market. Whipping cream, homemade malai, cooking cream, these are types of cream which can be used in the recipe of Dal Makhani. If you are using malai, then make sure you blend it properly with the help of a blender. Then transfer the contents of malai to the other cup for the dal makhani.

2) Lentils: Black lentils and kidney beans are the main lentils used in the recipe of Dal Makhani. You can also add Bengal gram or chana dal for the addition of extra texture. Well, bengal gram can be the substitute of Rajma if you want.

3) Dried Fenugreek leaves: A small quantity of dried fenugreek leaves can make a huge difference to your curry. Make sure the quantity should be balanced with the quantity of mixture of Dal Makhani. 

How to cook Dal Makhani:



1) First step starts with soaking lentils like rajma and urad daal. These two things should be soaked in the water for a few hours. To decrease the time limit of the soaking process, you can use boiling water. That will minimize the soaking process. 

2) Then the next step would be cooking lentils. Drain the water from the previous step. And cook the lentils in a pressure cooker for about half an hour. Make sure the lentils should be tender enough at the last time interval. 

3) In the further step, open the lid of the cooker and check the lentils if they are soft and cooked. You can check the softness with your fingers. If they are not cooked, then you can add some more water in the cooker to go for 3 more whistles of the cooker.

4) Meanwhile , you can chop onions and tomatoes along with ginger garlic to make some puree. Puree will be formed with the aid of a blender. After that, keep the mixture aside. 

5) Next xtep, would be making masala. In a heavy pot, add some butter and ghee. Add bay leaf, cardamoms, and saute all of them for a while. Then in this mixture, add chopped onions and wait until they show brownish colour. Then add 1 tbsp of garlic paste to get the aroma of the curry. After that, you can tomato puree as per the quantity of the mixture. 

6) Now add salt, chili powder, garam masala, as per your taste. Cook the masala and saute the masala to make the mixture thick and red.

7 ) Now, mash the lentils and put them in a separate skillet. Keep stirring while adding water. 

8) Try the slow heating and cooking for a while and stir the dal/lentils accordingly. At the finished steps, don’t forget to add fenugreek leaves along with salt and chilli powder.
